Broccoli Cheese & Rice Casserole
Here is a recipe my mother in law gave me. Great with turkey dinner! Sometimes I add some chunks of chicken in with it to make it a meal during the week.
- 1/2 Pound Cheddar
- 1-2 Heads Broccoli
- 1 Pkg Uncle Ben’s Long Grain and Wild Rice Mixture
- 1 (or 2) cans of cream of chicken soup
Preheat to 350 F
Cook the rice as directed. Cook broccoli until crunchy (I have just tossed them in raw and that works out too). Mix soup and cheese together. Butter a casserole dish (I use round ones), alternate cheese-soup mixture, broccoli and rice in layers. Sprinkle with additional cheese. Bake for one hour.
