Cinnamon Apple Cheesecake with Walnut Crust

I made this for Thanksgiving dessert last year. It is my favorite dessert to this date! I really wanted a fall cheesecake for Thanksgiving last year that wasn’t pumpkin and after a bit of experimenting I decided apples would be perfect! I hope you all love it!

1/2 cup & 1 tablespoonĀ butter
1/4 cup packed brown sugar
1 cup flour
1/4 cup quick oats
1/4 cup walnuts, chopped
1 teaspoon ground cinnamon
2 (8-ounce) packages cream cheese
1 can Sweetened Condensed Milk
3 eggs
1/2 cup frozen apple juice concentrate, thawed
2 medium apples, cored and sliced
Cinnamon Apple Glaze (see below)

Preheat oven to 300F. In a bowl, beat 1/2 cup margarine and sugar. Add flour, oats, nuts and cinnamon. Mix well. Press firmly on bottom and halfway up side of 9-inch springform pan. Bake 10 minutes.

In a big bowl beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and juice concentrate. Mix until there are not more lumps. Pour into prepared pan. Bake 45 minutes and let cool.

While that bakes take a frying pan and cook apples in 1 tablespoon margarine until tender-crisp. Put the apples on top of the cheesecake. Then pour the apple glaze on top. Put in the fridge.

Apple Glaze: In small saucepan, combine 1/4 cup frozen apple juice concentrate, thawed, 1 teaspoon cornstarch and 1/4 teaspoon ground cinnamon. Over low heat, cook and stir until thickened.
