My Twice Baked Potatoes

I am not a potato fan. I simply do not like the taste..but I love twice baked potatoes. Well, my style of twice baked potatoes anyway. It may not be the most figure friendly recipe, but this is a recipe where it is worth it to cheat.

Twice Baked Potatoes
  • Baking Potatoes (Russets) 4-6
  • Head of broccoli
  • 1/2 cup – 1 cup of cheddar cheese (Depends on how much you make)
  • 1/2 a small container of sour cream
  • 1/2 cup – 1 cup (or to your taste) of Kraft Miracle Whip (NOT MAYO, miracle whip only)

First of all, I don’t always have sour cream on hand so whenever I don’t I just don’t use it.

Bake your potatoes (make sure you stab your potatoes with a fork a couple times. 60 mins at 350 or 45 mins at 400.

When cooked, cool and scoop the potatoes into a bowl. Mix with all of the ingredients, taste and adjust. Scoop the potatoes back into the shells and top with cheese, toss back in the oven and bake for 15-20 minutes.

To be honest, I am not the best with scooping the potatoes back into the shells. So what I do now is that I put the potatoes into a bigger souffle pan (casserole pan will work) and I use that! Works great!
