Strawberry Rhubarb Hand Pies

I’ve been looking forward all week to sharing this Strawberry Rhubarb Hand Pies recipe. Not only did the photography turn out incredible, but it tasted it amazing. Not bad for a three-ingredient recipe!

Strawberry Rhubarb Hand Pies

Last weekend was a busy one. I had big plans to finish staining my deck, but it rained. So then I planned on finishing my wainscoting project, and I had issues with my nail gun. So instead I made a batch of strawberry rhubarb pie filling and put together three recipes, including this one and these strawberry rhubarb parfaits.

These didn’t last long, maybe 20 minutes, and that’s because I had to shoo everyone away while I photographed them for this blog post. My husband got a call out (it’s been a very busy weekend for his work) so he grabbed a plate, tossed the leftovers on them and took them to work with him. Men.

Actually, let’s be honest I’m just jealous of his metabolism.

I used Pillsbury Crescents for this recipe (just like I did for the Apple Turnovers), they’re just so easy to work with. I pinched the middle seem together and spread some cream cheese on the bottom.

Then I spooned the strawberry rhubarb pie filling that I made that morning, folded the top over and pinched the sides with a fork. Be sure to cut a few lines along the top so they don’t explode, you don’t want to be cleaning that mess off the bottom of your oven.

PS – it’s totally okay if you don’t have homemade pie filling on hand, store bought is just fine. Don’t be ashamed on making life easier on yourself!

Strawberry Rhubarb Hand Pies

Ingredients

Instructions

  • Preheat oven to 375.
  • Separate the crescent rolls into four squares and pinch the middle pieces together.
  • Spoon the cream cheese on the bottom, and spread it out over half the crescent rectangle.
  • Next add the strawberry rhubarb pie filling.
  • Fold over, pinch the edges with a fork and cut a few lines on the top.
  • Bake for 18-20 minutes.
  • Let cool.

  2. Can you freeze the pie filling once you make it? If so how would you freeze it? I would like to use it for the Fourth of July to make the hand held pies. The pie filling is delicious all by itself but Hand held pies would be good to share. 

    • That sounds delicious Jeanine! I personally haven’t frozen it but if you read the comments, it has been done with success.
      I would either use a Tupperware container and maybe lay a piece of parchment paper on top so it helps keep some of the air out or use resealable bags! Let me know how it works out for you 🙂
