Does it get any easier than this? I love using my slow cooker, and this recipe for Crockpot Thai Chicken is really good. A smooth peanut butter sauce with a little bit of lime, a little bit of heat, and a whole lot of easy.

It’s hard to believe that this recipe first appeared on my blog in early August of 2009, since I’m on a mission on updating and recreating (and improving) old recipes I was able to revisit it. After a refresh and a new set of ingredients, I knew this had to be moved to the top. I hope you enjoy it!

TBK’s Pro Tip: In the last 30 mins of cooking time I add in a bag of frozen broccoli. It goes GREAT! Serve over rice.

This is a new family favorite of ours. I love that a few simple ingredients that I usually have in my pantry can be tossed together for an easy weeknight meal! It’s an after-school hockey night lifesaver!

Ingredients

  • 4 chicken breasts
  • 1 large red bell pepper  sliced
  • 1/2 cup chicken broth
  • 2/3 cup creamy peanut butter
  • 1/4 cup  coconut aminos or soy sauce
  • 1/4 cup lime juice
  • 4 garlic cloves minced
  • 1 tbsp cumin
  • 1 tbsp dried cilantro
  • 2  tsps  chili paste
  • 1 tsp red pepper flakes
  • 1/4 tsp pepper
  • 1/4 cup halved peanuts

Instructions

  • Add your chicken breasts into the slow cooker and top with the bell pepper.
  • In a mixing bowl, whisk together all of the ingredients (aside from the peanuts).
  • Pour over the chicken and vegetables in the slow cooker. Cook on high for 4 hours.
  • Garnish with cilantro and peanuts.
