I wanted to create a healthy snack recipe that the majority of lifestyles could enjoy. Since I’m in the midst of a round of Whole30 right now, these Coconut Cashew Bars were what I came up with. It was also a great way to show what the Vitamix 7500 could do.

I made this Larabar inspired snack with my Vitamix 7500.
I LOVE MY VITAMIX.
I use it at least once a day.
From my morning coffee recipe to healthy avocado ranch dip to vegetable loaded meatballs.
The Vitamix 7500 has a 2.2 HP motor, that means it can blend cashews, coconut, and dates like a dream. The pulse feature also gives you the choice of the option of texture.
So what’s next with the Vitamix? I want to try soups (yes the Vitamix not only mixes the soup but it heats it up too) and you can bet that I’ll be sharing it when I perfect a recipe.

Whole30 Bars
If you find yourself starving while on Whole30, chances are you didn’t eat enough at mealtime.
However, I like to have these as Whole30 snacks – just in case.
Add this to your list of Whole30 approved snacks.
These bars fall under Whole30 compliance since it contains only three ingredients: dates, coconuts, and cashews.
I love using a base for coconut bars and adding in whatever ingredients I’m craving to complete it. More options would be to add dried fruit, almonds, and if even cocoa.
The consistency of these coconut cashew bars is totally up to you. You can use the Vitamix until they’re completely smooth or you can do what I did and leave some texture in them.
If you blend or process it smooth, it will be the consistency of a Larabar, add chocolate chips and it’s the cashew cookie kind!
This is the texture I stopped with, it was loose but I was able to press it together.
If you want it smoother, it’s easy to make that happen. If you have leftovers, you can crumble it up for Strawberries with Coconut Cashew Crumble.

Supplies need:
- 9×9 pan
- Parchment paper
- This makes for easy cleanup!
- Vitamix 7500
- Or a food processor/heavy duty blender

Coconut Cashew Bars
Ingredients
- 2 cups pitted dates
- 3/4 cup shredded coconut unsweetened
- 2/3 cup unsalted cashews
Instructions
- Add all of the ingredients into a high powered blender (I use the Vitamix 7500).
- Process on low for 3-4 minutes.
- Line a 9×9 pan with parchment paper and press the mixture in, let set for an hour or two.
- Cut into 6.

These are so yummy! My husband loves them! Instead of making them in to bars, I rolled them in to bite size balls! Found this to be much easier to work with. Put them in the freezer to harden before we ate them. DELISH! Thanks for sharing! ❤️

If you have a food processor that will work, or a high powered blender like a Blendtec or Ninja (with the Ninja, you may have to take a few breaks).
These are so quick, easy and delicious..thank you! My husband and I are 3 days into Whole30 and miss the bars we used to eat while doing low carb. This will certainly satisfy sweet cravings. I had ingredients on hand so cost is low and I like making them myself so I can cut them into any size. I cut the pan into 16 pieces, each should be enough to satisfy cravings. I also like the suggestion to roll into balls!

Hi there! Do these have to remain refrigerated? I’m going on a backpacking trip in a few weeks and am looking to make some paleo-friendly trail snacks, but almost every “energy bite” recipe states that they should be refrigerated.

I have left them on the counter and they’re fine. There’s no dairy so I’m not worried. Roll them into tight balls. They’ll hold together longer hiking. Have fun!

They’re usually gone within two days so I can only vouch for that haha.
I found that I cannot control myself when I have dates in my pantry. I just eat way too many at once! So, I keep raisins in my pantry and found that they are a perfect substitute for any recipe calling for dates.
I subbed the dates for raisins, added coco powder, and formed them into bite sized spheres then froze them. So tasty!!
