How to Make Chicken and Vegetable Soup

Sauté Vegetables

Turn your Instant Pot to the Sauté function and add onion, celery, and carrots. Sauté until the onion is almost translucent, then add green pepper, zucchini, and garlic. Give it a good stir for about 2-3 minutes.

Sautéing your veggies first is vital to the flavorful broth that makes this Instant Pot chicken and vegetable soup stand out.

Cook Chicken Veggie Soup

Add remaining ingredients and seal the lid. Change your Instant Pot to the Soup setting, then turn it down to 45 minutes. The pressure cooking will make it taste like it’s been cooking all day.

If you’re cooking on the stovetop, add remaining ingredients and allow to simmer until chicken is cooked through, at least 2 hours. If you are using a slow cooker, cook on low for 6-8 hours.

Shred Chicken

Manually release the pressure once the time is up.

Using two forks, shred the chicken and give the chicken veggie soup a good stir to distribute it evenly. Serve warm and enjoy!

TBK’s Pro Tip: My friend Britney told me a few years ago that she adds lemon to her soups to bring it that extra “zing”. Ever since then, I put lemon, lime, or even apple cider vinegar in my soups to finish them off. Yum!

Nope! One of the best parts of cooking your chicken vegetable soup in the Instant Pot is that it’s an easy, one-pot meal.

The pressure, as well as the high heat, from the Instant Pot means any bacteria from your raw chicken will be killed, making it unnecessary to cook your chicken before tossing it in. In fact, doing so may overcook your chicken and make it tough to chew.

Can I shorten the cook time on this chicken veggie soup?

Sure, this Instant Pot chicken vegetable soup can cook in about 20 minutes if you’re pressed for time. I like to cook it for 45 because it gives the taste of having cooked all day. As we all know with soup, the longer it cooks – the better it tastes.

Ingredients

  • 2 tbsps extra virgin olive oil
  • 1 onion diced
  • 3 carrots diced
  • 2 stalks celery diced
  • 1 green pepper diced
  • 1 small zucchini diced (or 1/2 medium)
  • 1/2 cup french beans diced
  • 4 cloves garlic minced
  • 1 28 oz can crushed tomatoes
  • 4 cups chicken broth
  • 2 small chicken breasts
  • 1 cup kale leaves shredded
  • 2 bay leaves
  • 1 tbsp lemon juice
  • 2 tsps  dried oregano
  • 1 tsp sea salt
  • 1/2 tsp  ground pepper

Instructions

  • Turn the Instant Pot onto the saute setting and add the olive oil.
  • Add the onion, carrots, and celery. Saute until onion is almost translucent.
  • Add the green pepper, zucchini, and garlic. Give it a good stir for about 2-3 minutes.
  • Add the rest of the ingredients. Seal the Instant Pot lid and turn the valve to seal. Set the setting on soup, then turn it down to 45 minutes – it's all it needs to taste like it's been cooking all day.
  • Once the Instant Pot beeps, let it vent naturally or turn the valve to release the steam and pressure.
  • Take two forks and shred the chicken breasts. Give the soup a good stir and serve.

    I like to buy chicken and make my own chicken strips. I also pre cut skinless raw chicken up for a stirfry, from rice to noodles I do them all. I cook whole chickens and make my owns soups (I can’t recall the last time I bought a can of soup) I also like to mix things up and make a chicken lasagna (With spinach of course).   82. My favorite is Chicken Burrito Bake. Its soooo delicious and easy to make. Can make ahead and pop in oven later that same day. I cut this recipe in half as there are just 2 of us.

    Oven at 350 degrees

    4 chicken breasts cooked and chopped small or shred. (I like mine chopped)
    4oz. green chillies
    16oz. sour cream
    2 cans cream of chicken soup
    1 small onion
    3/4 cup cheddar cheese, shredded
    3/4 cup Monterrey cheese, shredded
    12 med. soft burrito shells
    Mix all ingredients together and spread onto burrito shells. Saving some mixture back for spreading on top after. Along with some extra of the cheeses to sprinkle on top. Or shed more cheese for top. you be the judge if you like lots of cheese. Place filled burrito shells in sprayed lightly baking dish and heat or bake for 25-30 min.
