Cold Italian Pasta Salad

A wonderful addition for any event, this hearty and tangy pasta salad with a nice, zesty Italian dressing will definitely make everyone happy at any table it is served. It combines several tasty ingredients into a blend that floods the sensations and makes other salads pale before it. It is easy to make as well as very sturdy and calorific. A word of warning – although you may feel inclined to eat a lot of it you should check your diet. Before you begin you will need some ingredients that will be the base of your salad:

Italian Pasta Salad

  • 14 ounces (400 gr) uncooked rotini pasta
  • 2 chopped tomatoes
  • 1 chopped banana pepper
  • ¾ cup pitted black olives
  • ¾ cup pitted green olives
  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • ¼ pound (100 gr) cheddar cheese
  • ¼ pound (100 gr) pepper jack cheese
  • 1 red onion (optional)
  • 1 cup Italian dressing
  • ¼ cup olive oil

You should begin by boiling the rotini and then rinsing them with cold water. Make sure you don’t overdo the boiling as you want them to be soft, yet firm enough to actually look good. Use slightly salted water while you do that and a high heat. Cook them uncovered and stir them from time to time, it should take about 8 minutes of cooking until they are good to go.

Next you need to chop the cheeses to little cubes about half an inch in size, followed by the banana pepper, tomatoes and olives. Once everything is chopped up and prepared you can add them to the cooled down rotini, followed by pouring the Italian dressing and olive oil, basil and oregano. You can add a chopped up red onion if you don’t mind the taste. This will create an interesting combination with the rest of the ingredients.

Toss the salad well until everything is perfect and place it in the fridge until it has cooled down sufficiently. It is best to leave it overnight as this will allow the salad to “age” and acquire the perfect taste.

A word of warning: overall you have a beautiful, tasty combination of cheese, vegetables and pasta which contains a pretty significant amount of carbohydrates, proteins, sodium and saturated fat. Enjoy it wisely in small portions and don’t eat it too often as it is very rich and nutritious and it can quickly lead to weight gain. In general there are plenty of variations of pasta salad out there and you can find versions with meat, mushrooms and more. If you feel like experimenting you can even create your very own variety that is perfectly tailored to your individual taste with a bit of work. Enjoy!
