Summer is right around the corner, and that means it’s almost BBQ season!
Our house doesn’t have air conditioning (it’s not a common feature to have where I live in Northern British Columbia ) and because we don’t want to overheat the house too much, we don’t use the oven often in the summer months. It’s safe to say that our BBQ is well used and abused.
Friday nights are our steak nights, but we also cook up chicken (like these BBQ Tex Mex Chicken Breasts), or make kebabs (like these Spicy Chicken Kebabs) but I often struggle with figuring out a side dish that’s not just healthy but incredibly tasty too.
What are bbq side dishes so hard? Especially when you’re sick of the typical side salad and baked potato?

Usually, my go-to side dish is a simple spinach based salad with a homemade Greek dressing, but that gets old really fast.

I’m super picky when it comes to vegetables (I only like a handful) so we’re limited. Bell peppers are, thankfully, on the like list and when I want something zesty fresh I go for this three pepper salad.

Ingredients Needed for Pepper Salad

Head to your fridge right now to see if you have the following ingredients on hand for this easy belly pepper side dish:

  1. Three peppers ( different colors of bell peppers: I use red, orange, and yellow).
  2. Half a red onion
  3. Fresh parsley
  4. Rice Vinegar
  5. Toasted Sesame Oil
  6. Crumbled feta cheese
  7. Sea salt and pepper for seasoning

How to Cut Bell Peppers for Salad

For this bell pepper salad recipe I like to cut the pepper julienne, which means the peppers are cut into long, thin strips. The same goes for the red onion as well.
Not only is this more eye appealing for presentation, it’s also easier (both a win in my books).

How to Marinate Peppers

This marinated pepper salad recipe does not use canned marinated peppers. However, it is a salad that should be made ahead of time so there is the opportunity to marinate. I mentioned this before, but I’ll say it again: I like to put the recipe together in the morning if I’m BBQing that night. It will be nice and zesty by dinner time and it’s also one more thing done! You can also do this the night before, whatever works for you.

How to Make Three Pepper Salad

Making this three pepper salad is really easy, simply combine the ingredients and let it sit and marinate. I recommend throwing it together in the morning, so it has all day to flavor up (yes, that’s the professional blogger term here).

Ingredients

  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 1/2 red onion
  • 1/2 cup parsley
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/3 cup crumbled feta cheese
  • Sea salt and pepper

Instructions

  • Core and seed the peppers and slice them. Add them to a large bowl.
  • Slice the onion and add them to the bowl along with parsley.
  • Add the vinegar, oil, salt, and pepper.
  • Cover and refrigerate for at least an hour, toss with feta cheese and serve.

    We loved this, and will make it again. I didnt have parsley so used the tender stem and leaves of celery. And forgot the feta. Didnt need it.
