Chicken and Wild Rice Soup
Aromatic chicken and wild rice soup will knock out whatever ails you both body and soul. Loaded with vegetables, chicken, and wild rice this wholesome homemade soup is a fall classic and a winter favorite.
Prep Time 10 minutes Cook Time 50 minutes Total Time 1 hour Servings 10 servings Calories 121 kcal 1 tbsp olive oil 1 onion diced 1 cups carrots sliced 3 stalks celery sliced 1 tbsp minced garlic 2 tbsps fresh sage minced 2 tbsps dried parsley 1 tsp paprika 1 tsp pepper 12 cups chicken broth 3/4 cup wild rice 2 cooked chicken breasts chopped 1 tsp sea salt
In a large pot heat the olive oil over medium heat and add the onion, carrots, and celery. Saute for 2-3 minutes.
Add the garlic, sage, parsley, paprika, and pepper and stir until fragrant (another minute or so).
Pour in the chicken broth, wild rice, and chopped chicken. Bring to a boil, cover, and simmer on low for 40 minutes.
Season with salt (and pepper) to taste.
