Chicken Ricotta Stuffed Shells

Instructions
Preheat oven to 375 F.
Cook the jumbo pasta shells as directed on the box. Drain and set aside to cool.
Meanwhile put together the filling and sauce.
Filling
Squeeze the chicken sausage from the casings into a bowl, add the rest of the filling ingredients and mix well. Set aside.
Sauce
Add the olive oil and heat over medium heat. Add the onion.
Saute until almost translucent and add the garlic. Stir for another 2 minutes.
Add the rest of the ingredients and bring to a low simmer.
Remove from heat.
Putting it together
In a large 9x13 pan, scoop half of the sauce and spread over the bottom.
Take a jumbo pasta shell and spoon some the filling inside (roughly 1 tbsp), finish until there is no more filling.
Lay the shells over the sauce, and spoon the remaining mixture over.
Drizzle the shells with olive oil, cover with aluminum foil and bake for 30 minutes.
Pull the pan out of the oven, take off the foil and top with the mozzarella cheese.
Broil for 5 minutes or until the dish is brown, bubbly and irresistible.
