Roasted Chicken and Artichokes
A one dish roasted chicken and artichoke bake.

- 3 chicken breasts
- 1 jar marinated artichoke hearts
- 1 red onion cut in 8ths
- 1 red bell pepper quartered and then sliced in half
- 1 cup baby carrots
- 1 bunch asparagus ends trimmed
- 2 tsps minced garlic
- 1 tsp sea salt
5 hours before the dish goes in the oven add the chicken breasts, artichoke hearts (with juice), onion and bell pepper into a bowl. Marinate for a few hours.
Pre-heat the oven to 375F.
Strain the artichoke marinade.
Spray a baking pan with nonstick spray. Place the chicken breasts on the pan and arrange the vegetables around the chicken. Season with salt, pepper, and garlic.
Bake for 45-50 minutes or until the chicken breasts are done.
