In a medium size bowl add the flours, baking powder, pear, cheese and sea salt. Set aside.
In a separate bowl add the melted coconut oil (just zap 1/4 cup of coconut oil in the microwave until melted) and whisk in the eggs. You're going to want to work quickly if the eggs are cold since it will make the oil harden.
Add the wet ingredients into the dry and combine.
Spoon the batter on a parchment or slip-mat lined pan, making eight.
