Turn on the sauté function on the Instant Pot.
Add 1 tbsp. olive oil. Sauté 1 lb. of sliced Andouille sausage. Remove when browned.
Add another tbsp. of oil. Then add 1 small diced onion and 1 diced bell pepper. Sauté the vegetables until translucent. Add 2 minced garlic cloves and cook for about a minute, stirring often.
Stir in 1 lb. of dry kidney beans, 6 cups chicken broth, 2 bay leaves, 2 tsp of Cajun seasoning. 1/2 tsp thyme, 1/2 tsp salt, and 1/2 tsp pepper.
Deglaze the bottom of the pot if needed by scraping it with a wooden spoon.
Set to high pressure for 65 minutes.
When finished, use the quick release function by turning the valve to release seam right away.
Remove the bay leaves and mash some of the beans with a potato masher to help thicken the mixture. Return the sausage to the pot and cover for a few minutes to reheat it.
Serve the red beans and sausage hot over cooked rice.
