In a large mixing bowl, stir together 2 cups almond flour, 1/2 cup melted coconut oil, 1/3 cup maple syrup, 1/4 teaspoon kosher salt and 1 teaspoon vanilla extract until smooth.
Spread the mixture evenly into your lined baking pan. Bake for 35 minutes or until the crust turns golden brown. Let sit for 5 minutes after removing from the oven.
FILLING:
Meanwhile, in a large mixing bowl, gently stir together 3 cups thin apple slices, 1 tablespoon coconut flour, 2 tablespoons maple syrup, 1 teaspoon ground cinnamon.
Spread the apple slices evenly over the crust.
TOPPING:
In a large mixing bowl, stir together 1/2 cup almond flour, 1/2 cup rolled oats, 1/4 cup pecans, 1/4 cup cold coconut oil, 1/2 teaspoon ground cinnamon, 1/3 cup coconut sugar, 1/4 teaspoon kosher salt.
Sprinkle the crumble topping evenly over the apple slices.
Bake for 30-35 minutes or until golden brown.
CARAMEL:
In a small saucepan over medium heat, gently melt 1/4 cup grass-fed butter then slowly incorporate 1/2 cup coconut sugar and 4 tablespoons almond milk.
Bring to a gentle boil, then reduce heat and stir occasionally for 6-8 minutes or until the mixture sticks to the bottom of your spoon. Let sit for 10 minutes.
LAST STEPS:
Top with some pecans and pour the caramel sauce evenly over the dessert. Let sit 15-20 minutes before cutting into 16 squares.
