  • 8 medium carrots grated (I used a spiralizer)
  • 1/2 cup chopped parsley
  • 3 tbsps lemon juice
  • 2 tsps olive oil extra virgin
  • 2 cloves garlic chopped
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/2 tsp cayenne pepper

  • Combine all of your ingredients in a bowl and mix well.
  • This salad is best if you let it sit and marinate (covered) in the fridge for about 2-3 hours before serving.
  • Serve with your favorite summer main course.
