No Bake Coconut Bars

A homemade Larabar inspired but the coconut cream kind. Easy to make, raw, vegan, and clean eating approved.

Ingredients

  • 1 cup pitted dates
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/4 cup unsweetened shredded coconut
  • 1 tsp coconut extract

Instructions

  • Add all of the¬†ingredients in your blender or food processor (I use a Vitamix) pulse/blend until incorporated.
  • Press into a parchment paper lined 8x8 pan and let set in the fridge for a few hours.
  • Divide into servings.
