Chicken Ricotta Stuffed Shells

Ingredients

Filling

  • 4-5 chicken sausage I used a honey garlic flavour
  • 1 16oz small container of ricotta 454g
  • 1/2 cup parmesan cheese
  • 1 tsp  lemon juice
  • 1 tsp  basil
  • 1 egg

Sauce

  • 1 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 cup frozen spinach thawed
  • 1/4 cup chicken broth
  • 2 6oz cans tomato paste
  • 1 tsp  dried rosemary
  • 1/2 tsp  basil
  • Sea salt to taste

Shells

  • 25 jumbo pasta shells
  • 1/4 cup olive oil
  • 1 cup mozzarella cheese

Instructions

Preheat oven to 375 F.

  • Cook the jumbo pasta shells as directed on the box. Drain and set aside to cool.
  • Meanwhile put together the filling and sauce.

Filling

  • Squeeze the chicken sausage from the casings into a bowl, add the rest of the filling ingredients and mix well. Set aside.

Sauce

  • Add the olive oil and heat over medium heat. Add the onion.
  • Saute until almost translucent and add the garlic. Stir for another 2 minutes.
  • Add the rest of the ingredients and bring to a low simmer.
  • Remove from heat.

Putting it together

  • In a large 9x13 pan, scoop half of the sauce and spread over the bottom.
  • Take a jumbo pasta shell and spoon some the filling inside (roughly 1 tbsp), finish until there is no more filling.
  • Lay the shells over the sauce, and spoon the remaining mixture over.
  • Drizzle the shells with olive oil, cover with aluminum foil and bake for 30 minutes.
  • Pull the pan out of the oven, take off the foil and top with the mozzarella cheese.
  • Broil for 5 minutes or until the dish is brown, bubbly and irresistible.
