Ingredients

  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 onion chopped
  • 1 red bell pepper diced
  • 1 cup chicken broth
  • 1 14oz can black beans
  • 1/2 cup frozen corn
  • 1 14 oz can fire roasted diced tomatoes
  • 1 6oz can tomato paste roughly 1/4 cup
  • 1/4 cup applesauce
  • 1 tbsp ground chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp garlic
  • 1/2 tsp cayenne

Instructions

  • Heat a large pot over medium heat and add the olive oil. Once that is heated add the ground chicken and scramble fry until it's cooked (about 7-8 minutes). Add the onion and red bell pepper and cook for 3 minutes.
  • Add the rest of the ingredients and bring to a boil.
  • Cover the pot and bring it down to a simmer for 50 minutes. Check on it at the 30 minute mark to give it a good stir.
