For the past few weeks I have been watching what I eat and recording it, yes a part of me is doing it for weight loss but the bigger part of me is doing it to figure out why I’m constantly bombarded with chronic hives.
I have a massive sweet tooth, and I love chocolate but one dessert I never make is cookies. Why? Because will power hasn’t always been my strongest asset in health and fitness and I know I would eat far too many than I care to admit.
With all that in mind, I knew I wanted to create a small batch of cookies that are not only healthy and full of fiber but also gluten free.
4 Ingredient Gluten Free Cookies
I chose gluten free because after trial and error (plus a blood test) it appears that I have an intolerance to wheat. I also want to mention that the chocolate chips I bought are dairy free because my husband is lactose intolerant. Yes, we’re a fun bunch to cook for – stop rolling your eyes (haha). It doesn’t matter if the chocolate chips you buy are dairy free or not, it all tastes the same. I do recommend mini chips though, you get more of an “even chocolate placement”.

Healthy Cookies Recipe
Years ago I made two ingredient banana oat cookies and I have been thinking about them a lot lately. I’m alway on the lookout for healthier desserts and I couldn’t get these cookies out of my mind. I’m not 100% sure but I believe the original two ingredient cookies I made were from Ambitious Kitchen since when I Google for banana oat cookies she shows up at the top of Google. So thank you, Monique, for the delicious base of this recipe!
TBK’s Pro Tip: Not so much a tip but I’d even recommend these coconut chocolate chip cookies for breakfast. But shh…don’t tell my son that.
4 Ingredient Gluten Free Coconut Chocolate Chip Cookies
Ingredients
- 1 banana
- 1 cup quick oats
- 1/4 cup unsweetened shaved coconut
- 1/4 cup mini chocolate chips
Instructions
Preheat oven to 350.
- In a medium bowl, mash the banana with a fork until smooth.
- Add the rest of the ingredients and combine.
- Form the cookies into 8 patties and lay on a 9x13 sheet lined with parchment paper.
- Bake for 12 minutes.

I don’t have a thyroid, it was removed but that’s about when this all started!
I am new to baking- can someone please tell me if I am supposed to cook or soften the oats first? Do raw oats cause bloating? Any information is appreciated- these cookies look wonderful.Â
