Oven Risotto with Mushrooms

The funny thing is, I never even heard of risotto until I started watching Hells Kitchen.

I became familiar with it because it was in every episode and was usually an appetizer (or some sort of course) that they sent out.

If it’s good enough for Gordon, it’s good enough for me.

I’ve had many trials and many failures with homemade risotto and I think you’re going to love this recipe.

What kind of rice to use in risotto?

Risotto works best with short grain rice. Arborio is the most common kind of rice you’ll find for mushroom risotto or any kind. The reason why is because short grain rice has higher starch content. In short, it makes a stickier risotto.

However, if you don’t have specialty rice in your pantry use what you have and leave me a comment on the type of rice and what worked/what didn’t for you.

Do I have to use mushrooms in risotto?

Mushrooms are super common and popular for risotto recipes, but you can also add other veggies like peas or spinach.

Trust me, I get it. My husband has basically banned mushrooms in our house (he hates them with a passion) and I have a small food intolerance to them.

Risotto Add Ins

Aside from peas, spinach, or mushrooms you can add in whatever vegetables you like (asparagus would be great in the spring).

Another add-in idea: Feel free to also add more cheese or even a bit of heavy cream if you want your dish to be extra hearty.

I have also made it with some bacon when I’m making this for a crowd.

It’s one of those great recipes to have in your back pocket and make when you are short on time or just don’t feel like cooking because it is just that easy!

Oven Risotto with Mushrooms

Ingredients

  • ½ Cup onion thinly sliced
  • 3 Tbsp olive oil
  • 2 Cups rice see notes
  • 1 Cup white wine optional, you can replace it for broth
  • 5 Cups chicken broth
  • 1 Cup parmesan cheese
  • 1 ½ Cups mushrooms sliced
  • 1 garlic clove minced
  • 2 Tbsp butter
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees. In a Dutch oven or skillet heat half the olive oil and garlic. Add mushrooms and cook until golden brown. Take the mushrooms to a dish and reserve for later.
  • Add the rest of the oil and the onion. Saute for 3 minutes or until translucent. Add rice and stir so all the grains are coated in oil.
  • Increase the heat to high and add the white wine, let it reduce scraping the bottom of the pan. Add broth and â…” of garlic mushrooms and stir to combine.
  • Close with a lid and take to the oven. Bake for 18 minutes.
  • Remove from oven and place over medium heat. Add parmesan and butter and stir for 2 minutes or until creamy.
  • Remove from fire and serve topped with the â…“ remaining mushrooms.
