No Bake Chocolate Cranberry Protein Bars

These No-Bake Chocolate Cranberry Protein Bars are the perfect lunchbox filler. Compact, packed with nutrients and extra healthy, these delicious protein snacks taste nothing like their store-bought counterparts. Easy to make and fuss-free, these can be whipped up and ready within minutes using only one bowl! Refined sugar-free, flourless, egg-free, vegan, dairy-free and gluten-free.

Ingredients:

  • 2 cups old fashioned rolled oats, divided
  • 1/2 cup peanut butter
  • 1/2 cup dates
  • 1/3 cup cocoa powder
  • 1 cup chocolate protein powder
  • 3/4 cup dried cranberries
  • 1/2 cup almond milk

Directions:

  1. Line a deep 10-inch baking dish with parchment paper.
  2. Place 1 cup rolled oats, peanut butter, dates, cocoa powder and protein powder in a food processor and process into a fine flour.
  3. Transfer to a large mixing bowl and add in the milk and dried cranberries. Mix thoroughly with your hands.
  4. Press the mixture evenly into the lined baking dish.
  5. Refrigerate for about 30 minutes then cut into 8 bars using a long sharp knife (watch the fingers!).
 
Note: the calorie count changes depending on the protein powder you use.
