Slow Cooker Thai Chicken

Does it get any easier than this? I love using my slow cooker, and this recipe for Slow Cooker Thai Chicken is really good.

Updated 2016: one of these days I’ll make this again and update the recipe with a photo. I’d like to try a few different things with this recipe to switch a few things up too.

Slow Cooker Thai Chicken

The best part is that this recipe has peanut butter! For more savory PB recipes check out the peanut butter recipes page.
**You can also use left over roast chicken, or whatever you find. Just make sure you take off the skin.

In the last 30 mins of cooking time I added a bag of broccoli. It goes GREAT! I served over Uncle Bens Wild Rice and Fine Chopped Herbs.

This is a new family favorite of ours.

Slow Cooker Thai Chicken


  •  3 chicken breasts
  • 1 large red bell pepper, sliced
  • 1 large red onion, diced
  • 1/2 cup chicken broth
  • 1/4 cup coconut aminos (or soy sauce)
  • 1 tbsp cumin
  • 4 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 2 tbsps corn starch
  • 2/3 cup creamy peanut butter
  • 1 tbsp coconut aminos (or soy sauce)
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • Red chili pepper, sliced
  • 1/2 cup chopped peanuts


  1. Add your chicken breasts into the slow cooker and top with the bell pepper and purple onion.
  2. Add the chicken broth, coconut aminos, cumin, garlic, chili pepper flakes, salt and pepper. Stir well, cover and cook on high for 4 hours.
  3. In a medium sized bowl, mix together the cornstarch, peanut butter, coconut aminos, and lime juice. Pour over the chicken and vegetables in the slow cooker.
  4. Cover and cook for another half hour.
  5. Garnish with cilantro, red chili pepper, and peanuts.

  2. Now this sounds delicious. I love crock pot or slow cooker recipes. You can have the house smelling yummy in a flash!
