Chicken and Wild Rice Soup

I’m not huge on creamy soups, so I wanted to share a Chicken and Wild Recipe soup recipe without:
- Cream
- Flour
- Mushrooms
Between preferences and intolerances, we can be a little boring here in the Derkson house but it’s the way it is.
Bring on the comfort food!
For me, soup hits me right in the heart. There is something about watching the leaves fall outside my kitchen window while simmering a pot of soup.
It’s oh so cozy.
So bring on the Hunter boots, fuzzy socks, and blanket scarves. We’re cooking up some chicken and wild rice soup today with my friends at Chicken Farmers of Canada.

Dairy Free Chicken Wild Rice Soup
This chicken and wild rice soup recipe isn’t Whole30 compliant (because of the wild rice) but it is a clean eating recipe that will make you feel good both inside and out. The aroma that wafts throughout the house as the soup simmers is heaven, oh how I love sage.
To mince the sage, roll the herbs together and slice through with your knife. Do this a few times.

TBK’s Pro Tip: Can’t find fresh sage? Use poultry spice
instead. It’s not the same, but it will be similar as it contains ground sage.
This soup is perfect for picky eaters, I don’t want to say it’s bland (total wrong choice of words) but it’s great for young kids who don’t like “too much” going on. You know? My sick husband said it hit the spot and me? I added a little extra S&P to mine and a dash of hot sauce because I love hot sauce in soup.

Chicken and Wild Rice Soup
Ingredients
Instructions
- In a large pot heat the olive oil over medium heat and add the onion, carrots, and celery. Saute for 2-3 minutes.
- Add the garlic, sage, parsley, paprika, and pepper and stir until fragrant (another minute or so).
- Pour in the chicken broth, wild rice, and chopped chicken. Bring to a boil, cover, and simmer on low for 40 minutes.
- Season with salt (and pepper) to taste.

You totally had me at wild rice. I am a sucker for wild rice as a side dish – truthfully, never imagined it in a soup but what a fantastic idea! This is definitely a dish for the colder weather!

YUM! Great recipe for this time of the year. WE love cooking soups during the fall and winter months. Great dinner to come home to when it is chilly out! I will be adding this recipe to my meal plan next week.
One of my favorite comfort dishes! Since i became vegan i haven’t made any yet. I’m sure i can substitute the chicken for a vegan alternative.
I’m surprised to see that there are no mushrooms in here! I’m also not a fan of creamy soups – because I can’t eat flour and cream. I’ve also just learned I’m allergic to mushrooms so this just happens to be the perfect soup for me!
