Foil packet potatoes, they’re a BBQ must have. Why is that you ask? Less work in the kitchen and easy clean up means more time with your family and guests.
Foil Packet Potatoes
When I have guests at the last minute, or I’m feeling lazy I like to make these foil packet potatoes. Each time I make them, they come out a little different as I switch up the herbs and spices but they’re easy just the same. Use the veggies as a base and toss what you have on hand. The amazing thing about recipes (most recipes) is that they’re flexible!
This time, I went the extra mile and added leftover red onion (from my Three Pepper Salad) and added a red and green bell pepper. I was in a hurry, so I decided to keep the herbs and spices fairly basic: oregano, basil, sea salt, pepper, and paprika.
So here’s the funny thing: my husband loves potatoes, me: not so much.
He prefers potatoes to taste like potatoes with a little seasoning, whereas I like to change the flavor altogether. When it comes to potatoes, we’re the odd couple.

These easy bbq potatoes are a twist on one pot meals which means one thing: easy to clean! The herb and garlic seasoning is clean eating and 1 yellow in the 21 Day Fix recipe program (I knew you would ask so there you have it!).

That’s it! As my son would say, “easy peasy lemon squeezy”.
TBK’s Pro Tip: Don’t use too much aluminum foil, as it will take longer to cook. I found that out the hard way a few times now 😉

Foil Packet Potatoes
Ingredients
- 1 bag of yellow baby potatoes
- 1 red pepper diced
- 1 green pepper diced
- 1/2 red onion diced
- 2 large cloves garlic crushed
- 1/4 cup olive oil + 2 tbsps
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp sea salt
- 1/4 tsp pepper
Instructions
- Preheat your grill
- Slice the baby potatoes in half.
- Lay out the foil and add all the ingredients.
- Wrap up, and add more aluminum foil and wrap again (to ensure that there will be no mess after).
- Grill for roughly 40 minutes.
